Gastronomy of Cantabria

Located along the northern coast of Spain, Cantabria is typically known for its stew dishes, seafood, spicy cheese, cider and frisuelos (crepes). Of these, seafood is the primary cuisine of the area due to the community being located along the coast.

Aside from the significant amount of seaMany of the traditional cuisine in the area originate from the western part of the community in Liebana, a steep mountainous region composed of several municipalities. Some of the traditional dishes which originate specifically from this area include, cocido lebaniego, orujo, and frisuelos (as previously mentioned). Cocido Lebaniego is a stew from the area which is made from chickpeas.

Another traditional dish of the area is marmita or marmitako, a stew popular in both Cantabria and Basque country that contains tuna, onion, potatoes, tomatoe, and hot peppers.

Anchovies are also extremely popular, many coming from Santona, or other fishing centers on the coast of Cantabria.
